Ingredients

  • 300g shrimp (peeled and deveined)

  • 4 large flour tortillas

  • 1 cup cooked rice (Mexican or cilantro-lime rice)

  • ½ cup black beans (drained and rinsed)

  • ½ cup corn (optional)

  • 1 cup shredded lettuce

  • ½ cup diced tomatoes

  • ½ cup shredded cheese (cheddar or Monterey Jack)

  • ¼ cup sour cream or Greek yogurt

  • 1 tbsp lime juice

  • 1 tbsp olive oil

  • 2 cloves garlic (minced)

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • Salt and pepper to taste

Directions

  • Cook the Shrimp – Heat olive oil in a pan, add garlic, and sauté for 30 seconds. Add shrimp, chili powder, cumin, paprika, salt, and pepper. Cook for 2-3 minutes per side until pink and opaque. Squeeze lime juice over the shrimp.
  • Prepare Fillings – Cook the rice and season it if desired. Chop the lettuce, tomatoes, and other veggies.
  • Assemble the Burritos – Warm tortillas on a dry pan, then layer rice, black beans, corn, shrimp, lettuce, tomatoes, cheese, and sour cream.
  • Wrap the Burritos – Fold in the sides, then roll tightly from the bottom up.
  • Serve – Enjoy as is, or toast on a pan for a crispy finish.
