Ingredients

  • 2 cups cooked rice (preferably day-old)

  • 1 cup shrimp, peeled and deveined

  • 2 eggs, beaten

  • 1 cup mixed vegetables (peas, carrots, corn)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp vegetable oil

  • 2 cloves garlic, minced

  • 2 green onions, chopped

  • Salt and pepper to taste

Directions

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add shrimp and cook for about 2–3 minutes until pink. Remove and set aside.
  • In the same pan, sauté garlic until fragrant.
  • Push ingredients to one side and pour in beaten eggs.
  • Scramble the eggs until cooked.
  • Add cooked rice and mixed vegetables.
  • Stir-fry everything together for about 3–4 minutes.
  • Return shrimp to the pan.
  • Add soy sauce and sesame oil and mix well.
  • Garnish with chopped green onions and serve hot.
