  • 2¼ tsp (1 packet) active dry yeast

  • ¾ cup warm water (about 110°F / 45°C)

  • 1 tbsp sugar

  • 2½ cups all-purpose flour

  • 1 tsp salt

  • ½ cup sour cream

  • 2 tbsp melted butter (plus more for brushing)

  • ¼ cup chopped fresh chives

Directions

  • Activate yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes, until foamy.
  • Mix dough: Stir in flour, salt, sour cream, melted butter, and chives. Mix until a shaggy dough forms.
  • Knead: Turn dough onto a floured surface and knead for 5–7 minutes until smooth.
  • First rise: Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  • Shape rolls: Punch down dough and divide into 12 equal balls. Place in a greased cast iron skillet or round baking dish.
  • Second rise: Cover and let rise for 30 minutes.
  • Bake: Preheat oven to 375°F (190°C). Bake rolls for 20–25 minutes, until golden brown.
