  • 2 cups fresh raspberries, divided

  • 2 cups sliced fresh strawberries, divided

  • 1 teaspoon balsamic vinegar

  • 1 teaspoon rose water (optional)

  • The Base:

  • 8 small plain meringue cookies

Directions

  • Whip the Cream: Beat the heavy cream in a chilled glass or metal bowl with an electric mixer until it becomes frothy. Gradually add 1 tablespoon of sugar and the vanilla extract, continuing to beat until stiff peaks form. Keep the whipped cream chilled in the refrigerator.
  • Macerate the Fruit: Combine 1/2 of the raspberries, 1/2 of the strawberries, the remaining 1 tablespoon of sugar, and the balsamic vinegar in a bowl. Mash the berries with a fork and chill the mixture in the refrigerator until you are ready to serve.
  • Combine the Mix: To serve, combine the mashed fruit and the chilled whipped cream in a bowl. Add the remaining fresh strawberries, the remaining fresh raspberries, and the optional rose water. Fold everything together gently.
